As part of the Lancaster House 25th anniversary celebrations, the team in the hotel’s Foodworks restaurant have devised a series of recipes in tribute to the seven Lancashire cheesemakers situated around the Forest of Bowland Area of Outstanding Natural Beauty.

And head chef Damien Ng from English Lakes Hotels Resorts & Venues led a tour of the county’s leading cheese producers who feature on the Visit Lancashire Tasty Cheese Trail.

Seven new recipes have been added to the restaurant menu featuring cheese ingredients from across North Lancashire.  They include an organic crumbly Lancashire cheese and broccoli quiche inspired by the Leagram Organic Dairy, and stuffed field mushrooms with a Dewlay Garstang Blue Cheese and a garlic and herb crust.

“We’ve used sheep’s milk from the Singleton Dairy to make tasty Cheddar cheese, smoked bacon and red onion marmalade canapes,” explains Mr Ng.  “And the chefs have also created Blacksticks blue cheese bon bons using produce from Butlers Farmhouse Cheeses.”

Sykes Fell cheese from the Greenfields Dairy forms the basis of the hotel’s new roasted red pepper and red onion tart.  JJ Sandhams Smoked Lancashire Cheese has been the key ingredient in the creation of an olive and sun blush tomato bruschetta, whilst Mrs Kirkhams’ Lancashire Cheese is being used to make a chorizo pasty.

Andy Lemm from English Lakes Hotels Resorts & Venues, the General Manager at Lancaster House, adds:  “The county is renowned for its highly skilled cheesemakers and the new additions to our menu are a tribute to their expertise and their traditional methods using Lancashire milk.

“We wanted to celebrate our 25th anniversary by involving our suppliers and we thought the idea of using the cheese trails to take the dishes out as a picnic treat was a great way to showcase their contribution.”
